Chef Moonyen Perales, a success story of skills and character PDF Print E-mail

“I believe that passion, self-discipline and perseverance to reach your dream, are what it takes in doing your best,” said Chef Moonyen Perales.

Moonyen Perales, a PGS graduate in this institution was formerly working at Marco Polo, and now he is hired as the 2nd cook of Marlow Navigation, a duly registered company in the Philippines but whose mother company is based in Cyprus. Marlow navigation supplies competent seafarers around the world with skilled and highly trained crew, among them are cooks and chefs.

Chef Perales, is one of the best example what is sacrifice and humility is all about in the kitchen arena. He was able to work with a head chef who was a fault finder instead of seeing what he is good at. But instead of quitting like the others, he remained and even proved his worth. He stayed for learning and what he had on his mind was he would gain more experience not only with the Chinese cuisine he was trying to  master which actually not a part of his ojt. After two months, everything came smoothly.

In spite of that, he heard rumors that he would be pulled out from the work but instead he became the assistant roasting chef at wok-ala-carte. The job was never that easy because one must know how to handle and master the techniques as experts.

“I am quite stunned as I thought about being designated as assistant roasting chef, but I was not hesitant to give a try and by trying I did my best too. This is what Gerardo’s taught us all. We must observe, give our best shot with the hands on and go for it, or else there will be no work. We are culinarian for nothing if we just scare ourselves away with the challenges in front of us, especially now that the real world is embracing us as we also dwell into it. This is what, who and how we are shaped for under Chef Gerry and Chef Faith.’Chef Perales shared.

“I’m that grateful to the PGS and to my Alma Mater, for equipping me what I have now. The assistance from the government and from the school itself is really remarkable. My trainings here have helped a lot. It is not only with the knowledge and ability to be at my best but especially my character, my work orientation, my values especially in dealing with people. I also went through discrimination from German counterparts, but I took it as a challenge. Now, I’m a better person, a better chef to tell”, says Chef Perales.
